Stars: Kale, carrots, citrus, sweet potatoes

  • Mon: Lentil soup with kale + crusty bread
  • Tues: Sheet pan citrus-rosemary chicken + sweet potatoes
  • Wed: Baked ziti + side salad
  • Thurs: Turkey & veggie chili + cornbread muffins
  • Fri: Cauliflower fried rice + egg rolls
  • Sat: Breakfast-for-dinner (eggs, hash, fruit)
  • Sun: Slow cooker pot roast + root veggies

Snacks: Clementines, trail mix, apple slices + peanut butter
Lunches: Leftovers, grain bowls
Breakfasts: Yogurt + granola, banana oat muffins


Week 2: Winter Warmth

Stars: Cabbage, squash, apples, beets

  • Mon: Butternut squash soup + grilled cheese
  • Tues: Pork tenderloin + sautรฉed cabbage + apples
  • Wed: Veggie stir-fry with broccoli, carrots + rice
  • Thurs: Baked potato bar (cheese, beans, sour cream, greens)

  • Thurs: Chili-stuffed baked potatoes
